By now the legend has far outweighed its performance, though this is probably still the most famous name in the game. The coach-loads of tourists and foreign dignitaries may have receded, and so have the government honchos who are such a fickle lot anyway, but people still come here for the ayam pop (pale-complexion chicken cooked in high pressure cooker, served with seasoned sweet soy sauce) and the sambal ijo (green chilli sambal) as well as homemade classics such as gulai ayam (chicken curry) and telor belado (sambal eggs). Although much has been said about the rendang being “subtly and precisely” altered to suit mainstream palates, it is strangely quite refined.
